Deep Dark Chocolate Moist Cake Recipe

Ingredients for cake:
1 1/2 cups brown sugar
1 1/2 cups white sugar
2 tsp. baking soda
2 tbsp. baking powder
3 cups all purpose flour
1 cup cocoa powder (a mix of regular and dutch cocoa is more recommended)1 tsp fine salt
1 tsp coffee
3/4 cup vegetable oil
4 pcs. large eggs
2 cups evaporated milk
1 cup boiling water
Ingredients for chocolate icing:
200g sweetened chocolate bar
250ml all purpose cream
Procedure for the cake:
- Preheat oven to 350°F and place wax paper on the 3x10x10 baking pan. Wet the baking pan a little to stick the wax paper.
- Sift and stir all dry ingredients in a large bowl. Add wet ingredients except 1 cup boiling water. Beat on a medium speed of electric mixer or use wire whisk.
- After thorough mixing add the boiling water and mix.
- Pour into prepared pan.
- Bake 35 to 40 minutes, or until wooden pick inserted in the center comes out clean. Let it cool for 15 minutes on a wire rack. Remove it upside down on the wire rack to take the wax paper and place it upside down on the desired platform for frosting.
- Top with chopped nuts or colored candies and chocolates for design.
- In a double boiler with low fire, use wire whisk to melt the sweetened chocolate bar then add all purpose cream.
